I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Carmelized Onion, Spinach Steak Pizza

It is Junk Food Friday!  It is that night to kick back, let the week go, pour a glass of wine and want food that borders on the bad!  This pizza is a combination of a few recipes.  After talking it out loud today with another cooking friend, this is the combination I ended up using.  I would have loved a nice juicy steak, pasta, bread and cheese; but let's be serious, first pricey for a Friday night at home, second, why waste a steak night on a typical Friday and third, a steak dinner is not suited for a junk food Friday!

Carmelized Onion, Spinach Steak Pizza

Your favorite Pizza Dough-I made my own today and added just a touch of honey to complement the strong flavor of bleu cheese and beef
1 can of diced tomatoes
1 strip steak
3 onions
Balsamic Vinegar
Spinach
Crumbled Bleu Cheese
Olive Oil
Butter
Salt and Pepper

First put the can of tomatoes in a small saucepan and on low heat reduce most of the liquid down.

Meanwhile caramelize the onions in a little olive oil.  Go slow with this so the onions get nice and brown-I answered the phone and they singed a little at the beginning :(

When the onions are cooked down, drizzle some balsamic vinegar on them and let it cook off.  Remove from pan and set aside.

Season your steak with salt and pepper.  Give a few swirls of olive oil in the pan and melt a sliver of butter in the oil.
Add your steak to the hot pan.  Cook for about 4 minutes.  Turn and cook the other side for a few minutes. Remove from heat and allow to rest.

Ready for the dough.

On top of prepared pizza dough, spread the diced tomatoes.

Top with fresh spinach.

Add the caramelized onions.

Slice the steak in thin strips.  Place on pizza next.

Sprinkle on crumbled bleu cheese.


Bake at 375 for 25-30 minutes.




This combination was very filling!  The only tweaking I would have done, which honestly I am embarrassed that I didn't think of this, I would have barely cooked the steak.  It got a little overcooked for my taste. This was more of a flat bread with toppings.  If you want your pizza with a lot of melted cheese you may want to add mozzarella because bleu cheese isn't very meltable.  It was a great Friday meal though;  Not counting the dough, it took all of about 30 minutes.  Domino's takes that long to deliver!  I made a $4 steak stretch for dinner for 2 and 2 lunches for tomorrow.  Very little fat, although for all of you carb freaks, yes I feel no guilt indulging in carbs tonight!  The pizza dough was delish and because it was hearty I actually ate less than traditional delivery pizza!
