Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Pasta Salad Makeover

Tonight was one of those times you have 'leftovers'(I hate that word; sounds so yuck, not fresh and unappetizing) in the fridge which are good, but you want something fresh.  I decided to take the delicious pasta salad from last night and give it a boost in order to create an entree.  This principle is great to do with any pasta salad or potato salad.  You can even do this to store bought salad to make it 'homemade'!  By adding a bit more mayonnaise (the pasta will have soaked up some of the original moisture), a vegetable that adds fresh crunch, a protein and some citrus to brighten it up, you can create a new meal that is tasty, economical and easy clean up-the trifecta of a good dinner!  I am giving you approximate measurements; base them on the amount of salad you are working with, as well as the number of people you are feeding.


Pasta Salad Makeover

4 c. Pasta Salad
1 T. celery seed
Zest of 1 lemon
1 green pepper, chopped
1/2 lb. cooked shrimp, cleaned and deveined
1/8 c. mayonnaise

Combine all ingredients.  Mix well and chill for an hour for flavors to combine.
