Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Oven Fried Chicken

Got in late last night from the concert in the park and did not take the time to post.  Another rockin' Friday night with good music, friends and food.  We all have those foods that we crave.  One of mine is fried chicken.  I love crunchy, juicy fried chicken.  The real deal, buttermilk, batter, chicken, submerged in bubbly hot grease.  So, with that description, and what you know about me, you probably guess I don't indulge myself with the decadent, finger lickin' good, treat.  I am always trying oven baked recipes that claim to be exactly like fried.  Usually I am disappointed because I anticipate that crunch only a bath of hot oil can give chicken.  This recipe, I am happy to report, was pretty close to its promise.  I would make this again.  It was very easy and quick; chicken was Buy One Get One  (BOGO) this week; little clean up, and good; yup, everything that is important!


Oven Fried Chicken

1-1/2 lb. boneless, skinless chicken breast (you can easily substitute thighs)
1/2 c. flour
kosher salt and pepper
1 large egg
1/8 c. milk
2 tsp. hot sauce, or more if you prefer
3/4  c. Panko bread crumbs
1-1/2 tsp. Old Bay Seasonings
1/2 tsp. Paprika
1/8 c. peanut oil

Preheat oven to 375 degrees.  Line a baking sheet with parchment paper or a silicone mat.

In 3 shallow bowls:
1. Mix flour, salt and pepper to taste

2. Whisk together egg, milk, and hot sauce.

3. Combine Panko, Old Bay, paprika, peanut oil, salt and pepper to taste.

Cut the chicken in strips (3 per breast).

Working one at a time, dredge the chicken in the flour, shake off the excess; dip in egg mixture, and dredge in the Panko, pressing to coat.
Lay on the baking sheet.  Do not let the sides of each piece touch another.

Bake for 45 minutes or until completely cooked through.
