Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Salmon Frittata with Broccoli

Welcome to 'cooking for one' week!  I am on my own this week.  I am determined to avoid drive through windows, frozen entrees and, chocolate as my main meal. It is important to me to eat fresh food as often as possible. Please don't misunderstand me, I love party, holiday and just that ordinary need, for decadent food; I simply like to save that indulgence for when I can really enjoy it guilt free!  That being said, it is Monday (yup, M & M Monday, don't worry I set them up with a great family dinner!); Monday under normal circumstances is not an excuse for indulgent food.  So no KFC or McD's was justified!  I had a piece of that lovely grilled salmon from last night.  That delicious protein along with one egg (yes, I used 2, but half is for lunch tomorrow), a pile of colorful veges and the hint of salty Parmesan, made this meal feel as though eating as one was important!  When I made salad yesterday I made enough for a few meals to save time and expense.  
This has color, texture, healthy protein, low fat (I will not lecture you on the value of eating eggs), and flavor.  It took max, 12 minutes start to finish.  AND I even took a photo of the amount of clean up, so that could not be an excuse!  Most ingredients you usually have on hand.  You can use any leftover protein.  You even can substitute a quality canned salmon.

Salmon Frittata with Broccoli

1/2 c. frozen broccoli florets-you can use fresh, simply pre-cook.
1/4 c. frozen corn
1 T. fresh chopped chives
Black pepper to taste
2 eggs
1 tsp. olive oil
A sliver of butter
1/4 c. flaked cooked salmon
1 T. grated Parmesan

Preheat broiler to high.
Place the broccoli and corn in a microwaveable bowl.  Microwave 45 seconds on high to warm.

Beat the eggs with the chives and black pepper.
Melt the butter in the olive oil in an 8" oven proof skillet.
Pour in the beaten eggs.
As the egg begins to set, pull the edges towards the center to keep the egg cooking evenly.
Sprinkle the vegetables and salmon onto the egg. With a rubber spatula, push the mixture around slightly.

Sprinkle the cheese on top.  Place under the broiler until brown and bubbly.


AND very little clean up!!!  Keep in mind I do not have a dish washer :(
