Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Buffalo Chicken Salad

My son and husband snagged some tickets to tonight's Pirate game.  It would be a traffic nightmare with not only the Pirates playing, but the Penguins going at it against the Rangers as well.  I figured I would pack them sandwiches to take rather than trying to rush dinner at home worrying about getting into the city.  I chose a recipe that had the hint of Junk Food Friday, and Guy's Night Out.  The kick of Buffalo Wing Sauce gave this chicken salad a nod to a guy grunt that would fit in with a few cold beers!

Buffalo Chicken Salad

4 cooked chicken breasts cut into chunks, I poached in water, crushed red pepper, cumin and salt to give it some depth and to stand up against the strong wing sauce.
1/2 c. ranch dressing
1/4 c. buffalo wing sauce
3 stalks of celery, chopped
3 T. chopped red onion
salt and pepper to taste
Lettuce leaves
Buns

In a medium bowl combine the chicken, celery and onion.

In a small bowl whisk together the wing sauce and ranch dressing.  Season with salt and pepper.

Coat the chicken and vegetables with the dressing.

Split the buns down the center from top to bottom to form a pocket.  Line with lettuce leaves.
Spoon the salad into the pockets.
