Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Spicy Asian Cucumbers

I know I have tackled many complicated recipes in the first half of this year to meet my challenge of a new recipe every day in 2014.  However, tonight's recipe involved a few simple ingredients, yet was packed with flavor.  We smoked some ribs today.  I looked for some light sides to go with them.  This simple cucumber salad is fantastic.  Sortof a combination of a fresh salad and a marinated pickle.  The tart, sweet, salty taste went perfectly with the rich, spiciness of the pork ribs.  Quite truthfully, I would double this recipe.  I am thinking it would be better after it sat in the dressing overnight.
Well, it is the close of the holiday weekend.  The great weather for all 3 days was a gift that only comes around once in awhile.  I hope everyone had a fun filled weekend with fun, friends, family and fireworks!

Spicy Asian Cucumbers

1 English cucumber (If using a regular cucumber, peel and remove large seeds), chopped
1 tsp. kosher salt + more for seasoning
1 T. rice vinegar
2 tsp. sugar
2 tsp. soy sauce
1/2 tsp. sesame oil
2 sliced scallions
1 minced garlic clove
pinch of crushed red pepper

Place the cucumber in a small bowl.  Sprinkle with 1 tsp. salt and let stand for 10 minutes.

While cucumber is standing, whisk together the rice vinegar, sugar, soy sauce, sesame oil, scallions, garlic and red pepper.

Drain the cucumbers.
In a small bowl combine the dressing and cucumbers.  Season with salt to taste.  Chill.

OK so, hmmm, well, you know I am an amateur cooking personality.  I was going in and out to the smoker, pulling weeds in the garden and trying to straighten up my office....I totally forgot to photo the finished dish.  Trust me, it looked good, tasted good and well worth trying!!!!
