Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Asian Tuna Lettuce Wrap

I was on my own for dinner tonight.  As I have written about before, it is way too easy to eat peanut butter from the jar and search for leftover Easter candy, when you are eating yourself!  I prevented myself from going down that pathetic path by grabbing a can of tuna.  Seriously, less than 15 minutes, 2 bowls, one fork, one knife and a cutting mat.  Oh wait, measuring spoons as well.  This tuna wrap was delicious.  I adapted a chicken salad recipe and came up with this combination.  I am thinking you could even toss this with hot soba noodles for a delicious noodle bowl to change it up.
I sat down with a good book, my dinner and enjoyed a quiet evening meal.


Asian Tuna Lettuce Wrap

1 can of tuna, drained well
1 carrot cut into matchsticks
1 stalk of celery, sliced thin
1 green onion, sliced thin
1 T. sliced almonds
Fresh Basil leaves, sliced thin
4 lettuce leaves
1 tsp. rice vinegar
1 tsp. soy sauce
1/2 tsp. sesame oil
2 tsp. vegetable oil
1/8 tsp. crushed red pepper
Whisk together vinegar, soy sauce, sesame oil, vegetable oil and red pepper.
In a medium bowl combine tuna, carrot, celery, onion and almonds.

Add the dressing and toss to coat well.

Place a scoop of salad in the center of each lettuce leaf.  Sprinkle with fresh basil.
