Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Mediterranean Tuna Wrap

We all have weeknights where schedules do not coordinate, and we are tempted to pull through a drive-through to get dinner or order a delivered pizza. However, I encourage you to pause.  There are many options for easy, healthy, quick clean up, tasty choices that will trump the empty taste of expensive fast food.  (whoa, whoa, I am not a saint!  I crave KFC and Wendy's burgers just like the rest of you!  I simply don't like to spend the money or waste the Mulligan for an ordinary dinner fix!)  I get that the chopping, preparing and the sheer thinking about it, is sometimes not at all what you want to do. However, the 10 minutes spent on this inexpensive, healthy wrap will be worth it.  10 minutes, a few ingredients, and catching up on the local news, is all you need to relax and have something to eat that you won't kick yourself for choosing.  All I ask for is a pause.  If you pause and say, pi%$ on going home and cooking; I will not judge!  Enjoy your pizza!

Mediterranean Tuna Wrap

2 cans of tuna in water, drained well
1/4 c. finely diced red onion
2 T. chopped Parsley
3 T. olive oil
1/2 tsp. lemon zest
2 T. lemon juice
salt and pepper to taste
6 c. mixed greens
4 whole grain wraps
sliced tomatoes


In a medium bowl combine the tuna, onion, and parsley.

In another bowl whisk together the olive oil, zest, lemon juice, salt and pepper.

Pour 2/3 of the dressing over the tuna and mix.
Add the greens to the remaining dressing and mix.

Arrange tuna, greens and tomatoes on each of the wraps.

Roll up.  If not ready to eat, wrap each tightly in plastic wrap and refrigerate.



See!  Quick, healthy and filling.  They make a great lunch the next day.  Actually if you allow them to stay wrapped for a bit they taste even better!
