I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Quick Apple Streusel Cake

Junk Food Friday was relaxed and unplanned.  We made simple Philly Cheese Steaks and decided on an evening of binge watching another few episodes of Boardwalk Empire.  During cleanup I put this easy cake together and popped it in the oven for a treat.  Warm apple cake, sweet vanilla ice cream and an Irish coffee was an excellent way to spend a chilly pre-winter evening.  I have made 1-2 other baked goods with apples this year; however, this one is more of a coffee cake, not a true desert.  The cake is not very sweet.  It would be a good choice for a Sunday breakfast or an afternoon coffee catch up with a friend.
We are almost caught up to the current season of our TV watching.  I am thinking before we finish I should do a Junk Food Friday homage to the 1930's Atlantic City Boardwalk fare.....hmmm, I will start thinking!

Quick Apple Streusel Cake

1 1/2 c. flour
2 1/4 tsp. baking powder
1/2 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1 egg
1/2 c. milk
1/4 c. vegetable oil
1 1/2 c. chopped Granny Smith apples (2-3 apples), chopped

Topping:
1/4 c. sugar
1/4 c. flour
2 T. butter
1/2 tsp. cinnamon

Preheat the oven to 400 degrees.
In a large bowl combine the flour, baking powder, sugar, salt and cinnamon.
In a small bowl whisk together the egg, milk and oil.
Pour wet ingredients into dry and mix to combine well.
Fold in the apples.
Pour into a greased 8 X 8 pan. 

In a small bowl blend the sugar, flour and cinnamon together.  Cut in the butter with a fork until crumbly.  Evenly sprinkle the streusel over the batter.
Bake 25-30 minutes until a toothpick comes out clean.
Definitely serve warm with ice cream!
