Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Cranberry Orange Quick Bread

I will begin by saying, according to my husband, this is the best dessert he has ever eaten; I will secondly say, this was delicious, BUT, the 10 minute prep time the recipe suggests, no way, allow for 20.   Not hard at all.  It just took more time than I expected.  I had a few oranges left that I had bought on sale this week.  I also had some fresh cranberries in the freezer.  If baking is what you enjoy, this is seriously quite good.

Cranberry Orange Quick Bread

2 c. flour
3/4 c. sugar
1/2  c. brown sugar
1/2 tsp. salt
1/2 tsp. baking soda
1 stick of cold butter cut into small pieces
1 orange, zested
3/4 c. fresh orange juice
1 orange, peeled, sections removed and diced
1 egg
2 c. fresh cranberries

Preheat oven to 350 degrees
In a food processor combine the flour, sugars,salt, baking soda, and butter.  Pulse, pulse, puse until the mixture resembles finely grated cheese.
Add the orange zest, juice and the egg.  Pulse, pulse, pulse until the mixture is combined.
Remove to a bowl and stir in the diced oranges and cranberries.

Put batter in a prepared loaf pan. 
Bake for 1 hour and 15 minutes.
Let rest for 20 minutes.
Melt a bit of butter in a skillet.  Warm both sides of a slice in the hot pan before serving.


You do not have to heat the bread to enjoy.  But, by heating it, the outside gets that yummy caramel crunch.  Be careful though, due to the oranges and the moistness of the bread it can burn easily.  This is versatile-after dinner dessert, with your morning coffee or an afternoon indulgence instead of chocolate!  Enjoy!
