Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Caramelized Onion Dip

Another Junk Food Friday spent at the #Summersounds Concert In the Park with friends.  I like taking a treat to our group at the park.  They are so enthusiastic about what I have brought.  They give me their honest criticism and opinion of the evenings offering.  Well, let me tell you, hands down this dip was a HIT!  A bit sweet, a little kick and overall great taste.  Take your time caramelizing the onions for this recipe.  That is the key.  Bring out the sticky sweetness of the onions.  Junk Food Friday=Success!


Caramelized Onion Dip

2 large or 4 small onions
1 T. butter
1 T. olive oil
1/8 tsp. cayenne pepper
1 tsp. kosher salt
1/4 tsp. black pepper
4 oz. cream cheese
1/2 c. sour cream
1/2 c. mayonnaise

Lice the onions in 1/8 inch slices.  In a heavy bottom skillet on medium heat add the olive oil and butter.  

When butter is melted add the sliced onions, cayenne pepper, salt, and black pepper.

Cook for about 10 minutes, stirring occasionally.

When onions are soft and starting release their liquid, turn the heat to low.  Slowly cook the onions 
for about 20 minutes, until almost like a paste.

In a bowl combine the cream cheese, sour cream and mayonnaise.  Mix till smooth.

Add the onions and stir until well combined.  
Serve with crackers.
