Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

'Cheesy' Potatoes

Ok before you cock an eyebrow, or point a finger or gasp in shock, YES this recipe uses canned soup, major high calorie ingredients and overall is probably the worse dish you could eat if one tries to eat fresh food that is healthy.  That being said, when you are young, have small children and really could care less about what is 'good' for you, recipes like this are a staple!  Anyone and everyone who has eaten these potatoes at my house are ADDICTED to them.  They are potato crack. Now that my children are grown and I understand cooking, I make this dish one day a year-Easter.  We celebrate our family dinner on Holy Saturday.  Tonight the golden, sauce laden potatoes were anticipated and I did not disappoint.  If you ever want to go back to those carefree days of the 60's and 70's where every housewife could whip up gourmet food with a chef named Campbells, make this amazing treat.  I just warn you, you will need to go through rehab to keep you from sneaking Cream of Chicken Soup into your shopping cart weekly.
Happy Easter to my family and friends.  And, Dad if you are listening, yup, I sent all of it home with everyone else so I would not eat anymore!  I wish you were here to take one for the team, and graciously offer to take the potatoes home so we wouldn't have to suffer through eating the leftovers!

'Cheesy' Potatoes (not a lick of cheese in them; my kids lovingly called them that and the name stuck)

8-10 potatoes, peeled and cut into bite size pieces
2 c. of sour cream
1 stick of butter
2 cans of Cream of chicken
1 T. grated onion
Cook the potatoes until fork tender and drain.
Meanwhile make the sauce by heating the sour cream, butter, soup and grated onion.

Mix the sauce with the cooked potatoes until well coated.
Place in a large casserole.  Sprinkle with bread crumbs.

Bake 350 degrees for 20 minutes until top is brown and bubbly.
When you are in that blissful fog when you eat these decadent dish thank me.  When you realize you blew your calorie count for the next bazillion days, do not complain to me-you are responsible for your own choices!
