Television Feasts

I am a home cook who backyard gardens and has a serious closet addiction to the Food Network. I envision visiting the world in my own kitchen.

From Julia to Giada, I am a bi-product of the quirky world of anything food television. At age 10 I wanted to lunch with Julia; at 12 I thought sitting at Graham Kerr's table would be bliss; in college I was a diligent voyeur student of Jeff Smith's; and as a newlywed I envisioned myself being Martha. Then the sky opened up and violin music played in the background when I discovered an entire family of food shows on the blossoming food network. Twenty years later I am still a home chef with a backyard garden, yet in my head I am a trained chef who has eaten her way around the world, tasted all things exotic, competed in many challenges, judged the best of the best, and have a circle of friends which includes Emeril, Bobby, Rachael and more. I like to learn and challenge myself simply for the pleasure of all things food. I am a student of the University of Food Network and my textbooks, exams and extra-curricular activities all stem from channel 39.

Pesto Baked Salmon

I had a completely different meal planned for tonight.  Then I was watching the Food Network (of course) while I was cleaning the kitchen.  They did this salmon and I was curious to see if it actually worked.  Ok, this sounds simple, but really (really, really) delicious.  Follow the bouncing ball.  Take the direction as it is written and you will have the most moist, tasty salmon ever!

Pesto Baked Salmon

3-4 4 oz. salmon fillets
4 T. Store bought pesto-I am totally out of what I put up over the summer :(
1 T. Dijon mustard
Juice of half of a lemon



Preheat the oven to 300 degrees.

Butter a baking sheet and season with salt & pepper (I was slightly heavy handed so be conservative)

Place the fillets in the center of the pan and season again.
Mix together the pesto, mustard and lemon juice.

Spoon on top of the salmon pieces.

Bake 15-20 minutes until done to your likeness.
If you enjoy pesto, this is the recipe for you.  Baking the salmon at a low temperature cooked it more evenly. The way to know if this gets a thumbs up from me is when I say...I am sad I have to wait a year to have this again!
